Healthy Vegie Rice Paper Rolls
makes 24
1 large carrot, grated coarsely
2 trimmed celery stalks, chopped finely
150g wombok, shredded finely
2 teaspoons brown sugar
1 tablespoon lemon juice
25—17cm-square rice paper sheets
24 fresh mint leaves
1. Combine carrot, celery, wombok, sauce, sugar and juice in medium bowl.
2. Place 1 sheet of rice paper in medium bowl of warm water until just softened; lift sheet carefully from water, place on tea-towel-covered board.
3. Place 1 level teaspoon of vegetable mixture across edge of sheet; top with mint leaf. Roll to enclose filling, folding in ends. Repeat with remaining rice paper sheets, vegetable mixture and mint leaves.
4. Serve with sweet chilli sauce.
